After our last dinner party of the Holiday season, there were some leftovers. And for those of you who read my blogs on this website you know how I believe in leftovers and a great meal. So I took a few slices of Ham, the Hambone, some of the remaining cheese; crustini w/ parsley and herbs and went shopping for heavy cream, butter and about 2 lbs white potatoes (or enough for about 6 C) .
After turning on the oven to 300 degrees , peel & slice the potatoes in 1/8 ” pieces; grate the cheese(about 2+C) and julienne about 1 C of Ham. Rub the inside of a Baking Dish–Corning Ware or Pyrex will do well—with a few TB of butter, layer the potatoes, one layer at a time…..in between each layer put enough cheese to cover, a handful of ham, pats of butter(about 2TB) and S & P. Cover the top with the remaining cheese, ham & butter. Then pour on the cream (about 1 C). Put on the top of stove and heat till the cream just begins to bubble—do not boil! Remove from top of stove and put in oven for approx 1 Hour or until all the cream is absorbed by potatoes. Serve with a chilled Pinot Grigio or Sauvignon Blanc. Enjoy.
