There are many sources of essential vitamins and minerals needed for good health. While we know that eating plenty of fresh fruits and vegetables, proper carbohydrates, proteins and fats and drinking plenty of good water are important, not many people are aware of exactly which foods provide which essentials.
In my blog on nutrition, I will keep adding aspects which I hope will help you understand how certain foods provide what is needed. Keep in mind that this is just a guideline. For specific nutritional needs, one should always consult a professional, whether a medical doctor or nutritionist.
For Vitamin A & C: Try Cucumbers….(also good in the summertime for sunburn–just rub on the skin.) Here’s a Recipe for
2 Whole Cucumbers, Peeled, seeded and chopped coarsely
2 Scallions chopped fine
1 C Non-Fat Yoghurt (Preferably Greek)
1 tsp ea: Cumin Coriander and Mint (or Cilantro)
S & P to taste
Mix all ingredients in a bowl. Refrigerate. Serve with Roast Veggies or Lamb.
For Vitamin K and Anti-Oxidants: Green Beans. This Vitamin is good for bone density as well. I usually prepare these by simply steaming them, adding a little lemon juice. Great by themselves.
